Egg Fried Rice

Ingredients

450g long grain rice

4 medium size eggs

Egg Fried Rice

2 tablespoon vegetable oil

1 teaspoon garlic finely chopped

1 teaspoon ginger finely chopped

salt

black pepper

Half bunch spring onions,topped,tailed peeled and finely sliced.

Method

1. Put rice and 2 cups of water in a saucepan.

2. Cover with the lid and bring to the boil.

3. Once it is boiling, remove the lid and continue to boil until the water has evaporated.

4. Once evaporated, replaced the lid,reduced the heat and continue to cook for approximately 10 minutes.

5. Mix eggs together, using a fork.

6. Heat oil in a wok / pan. Add garlic and ginger and cook for 1 minute.

7. Add eggs and whisk in the wok /pan .

8. Add boiled rice, mixing thoroughly.

9. Season with salt and pepper.

10. Add spring onions, mixing thoroughly.

11. Serve
